Strawberry Cake Mix Brownies Recipe

Strawberry Cake Mix Brownies Recipe

Even though I am officially DONE with February, I'm not yet ready to part with winter. I'm watching snow fall lightly outside right now. The tiny flakes are in no apparent hurry to reach the ground. Just patiently falling lightly and quietly from the grey sky. There is a peace and beauty about winter that cannot be found in any other season.

Red Fruit Salad Recipe

My boys are funny. They make me laugh out loud at least a dozen times every day. I write every bit of their funnies down so that I never forget a single word of it. My three-year-old Sammy said something yesterday that will likely be in the top 3 of funniest things my boys ever said. If you follow me on Facebook, you know what's coming.

Fruit and Granola Parfaits Recipe

Do you ever take a series of photos of a particular food and forget that you took them? Only to find them, weeks later, screaming out to you from Lightroom? That's exactly what I did to these parfaits. And I feel terrible because they were delicious. I hope they can find it in their crunchy, creamy, fruity hearts to forgive me.

LEARN HOW TO CUT UP A MANGO IN THIS VIDEO TUTORIAL

I had made this delicious granola as one of my challenge recipes, and knew that I wanted to throw it together with some other ingredients to create some sort of parfait. I pondered these parfaits in my sleep. I do that every so often. Ponder food in my sleep.

Here's what I did.

I purchased two of those convenient little 6-oz. containers of Greek yogurt and mixed about a tablespoon of honey in each container.

I put the yogurt-honey mixtures into the bottoms of two separate tall glasses.

I put a few spoonfuls of granola on top of the yogurt.

For the top layer of one parfait, I mixed together:

1 kiwi fruit, chopped

1/2 of a mango, chopped

1 pineapple slice, chopped

For the top layer of the other parfait, I mixed together:

4 strawberries, sliced

1/4 cup of blueberries

1/4 cup of raspberries

Easy, delicious breakfast served! Just like that.

Redhead in Bed Drink Recipe

I'm a day late with this post again this week. I'm not sure how much time I will have in the coming days to post, so please forgive me for that.

So, drinks! Summer drinks! I love them. For me, lovely Minnesota weather = fun drinks, bbq-ing and family/friend outside time. When you endure an insanely cold and treacherous winter, these things all become really exciting. I was excited to mix up a fun new cocktail for my husband and me to enjoy in the 95-degree weather this week. It's the kind of cocktail you can't drink more than one of, or at least I can't. Its sweetness satisfied me after just one, and we are saving the rest for another day. I have placed the remainder in the freezer for a post-surgery indulgence.

In a medium bowl, toss together:

3 pounds strawberries, hulled and coarsely chopped

2/3 cup sugar

Let stand, stirring occasionally, until the strawberries release their juices, about 10 minutes.

In a blender, combine half each of:

The strawberries and their juices

1/2 cup plus 2 tablespoons vodka

1/4 cup fresh lime juice

1 cup of ice

Puree and pour into a pitcher.

Repeat with the remaining strawberries, juices, vodka and lime juice and 1 more cup of ice.

Fill 10 glasses (or just 2, and chill/freeze the rest) halfway with ice. Pour into the glasses and top each with:

1/2 tablespoon chilled Riesling

Serve!

I hope you are all enjoying this hot summer weather as much as I am.

By the way, the pile of snow is gone. :)
