Make this Creamy Tortellini Soup in your slow cooker for a super easy, comforting meal. Eliminate the sausage to make it vegetarian, if you so desire!
It is soup season! Is there anything in the world that smells better slow cooking in your kitchen all day than a creamy soup? This Creamy Tortellini Soup smelled absolutely delicious while it cooked and it tasted even better. It is a breeze to make and it can easily be turned into a vegetarian soup. Omit the sausage from the recipe and cook the onion and garlic in 3 tablespoons of olive oil instead. The sausage, though. THE SAUSAGE. Goodness gracious, you would not even believe the flavor it adds to this already-dreamy soup.

How do you make tortellini soup easy?
If you want easy, you are in the right place because tortellini soup does not get easier than this. There is no more than 20 minutes of prep time and your slow cooker does the rest of the work for you. It’s a dream! With cream! See the recipe card at the bottom of this post for the full instructions.
How do you make creamy tortellini soup?
This recipe calls for 1 cup of heavy cream, but it doesn’t get added until the soup has done the majority of its cooking. That cup of cream turns the soup into a creamy delight! You may replace the heavy cream with half and half or even milk (preferably whole), if desired.
How do I make Tortellini Soup vegetarian/meatless?
Easy! Omit the sausage from the recipe and instead cook the onion and garlic in a couple tablespoons of olive oil. Also, replace the chicken broth with vegetable broth. That’s it!
I have TWO soups that I’ll be posting next week that I’m super excited to share (and eat). If you want a few other soup recipes to get you warmed up this season, check out these:
