I’m on a soup kick! Fall is in full swing (although it became confused and turned into winter over the weekend) and what better way to enjoy this season than by making tons of comforting soup recipes?! Last week was Creamy Tortellini Soup and later this week will be Butternut Squash Soup. Today I bring to you the cheesiest, most vegetable-packed soup you’ll ever have the pleasure of knowing. I poured myself a bowl last night and then another half bowl because it was impossible to resist. It is comforting, cheesy, flavorful, satisfying and delicious!

THE BEST VEGETABLES FOR VEGETABLE SOUP

I didn’t quiiiiite squeeze all of these into this Cheesy Vegetable Soup, but close! It is jam-packed full of yummy fresh veggies! I loved this soup! Honestly, I love every single vegetable inside a bowl of soup, but if I had to pick favorites it would go like this:

  • carrots, broccoli, cauliflower, green beans, onions, celery, potatoes, peas, tomatoes, corn, zucchini, mushrooms, onions and asparagus

HOW TO MAKE EASY CHEESE SOUP

In a nutshell there are only a handful of steps required to make this easy creamy cheesy soup!

  • Heat the water in a large skillet or Dutch oven over medium-high heat. Add the chicken bouillon cubes and stir until dissolved. Add onions, celery, carrots, broccoli, cauliflower and potatoes and cook until all the vegetables are all tender. Simmer for 30 minutes. Pour cream of chicken soup into the soup and bring to a boil.

  • Add the Velveeta cubes to the skillet and continue to stir until smooth. Do not bring to a boil once the cheese is added. Add salt and pepper to taste.

COOKING TIPS

  • Serving this soup in a bread bowl would be AHmazing.

  • If you want a heartier soup, add some shredded rotisserie chicken.

  • Because this soup has cheese and vegetables in it, you'd think it would be perfect for freezing for later. But unfortunately, this soup would separate and the vegetables would become mushy, stringy and/or grainy. So enjoy this soup and refrigerate any leftovers for 3-5 days.

SUBSTITUTING VELVEETA FOR CHEDDAR CHEESE

You can, but the texture of the soup will change. I realize Velveeta isn’t the healthiest option, but we can all indulge once in a while, right? Stick with the Velveeta, in my opinion.

Cheesy Vegetable Soup

This soup is velvety smooth and delicious! Pour it into a homemade bread bowl or ladle into your favorite soup bowl!

ingredients:

  • 3 cups water
  • 3 chicken bouillon cubes
  • 1 yellow onion, chopped
  • 4 stalks celery, sliced
  • 3 carrots, sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 Russet potato, peeled and cubed
  • 2 cans cream of chicken soup
  • 1 1/2 pounds Velveeta, cubed

instructions:

  1. Heat the water in a large skillet or Dutch oven over medium-high heat. Add the chicken bouillon cubes and stir until dissolved. Add onions, celery, carrots, broccoli, cauliflower and potatoes. Simmer for 30 minutes. Add cream of chicken soup and bring to a boil.
  2. Add the Velveeta cubes to the skillet and continue to stir until smooth. Do not bring to a boil once the cheese is added. Serve in a bread bowl, if desired.
