Sausage Egg and Vegetable Scramble
/Sausage, eggs and vegetables make the perfect breakfast marriage! You can make this on the stovetop or even a grill. This breakfast is Whole30 compliant!

Since departing on this adventure, we have had very little down time. Granted, all of it has been enjoyable, but today was the first day we had nothing on our agenda and it was SO NICE. We took a trip to the campground pool, we caught up on laundry, we lounged in our RV and went mini-golfing. This morning I made a super quick and yummy egg breakfast, but it wasn't as good as this Sausage Egg and Veggie Scramble I made a few mornings ago. I made a huge batch and we enjoyed the last of it on the road the following morning.

This breakfast fits perfectly with my easy-meal theme that I'm sticking to on this trip. The rule that applied to my last easy on-the-road meal applies to this one, as well. Veggies can be swapped out and catered to your liking. I love meals that have wiggle room.

And have I mentioned how much I love our cast iron skillet? We have used it a TON on this trip. I can't imagine our lives without it.

Sausage Egg and Veggie Scramble
This breakfast is a great option for camping and can be easily catered to your liking!

Serves: 4
Total time: 30 min

Ingredients:
- 1 lb ground sausage (ensure the sausage is Whole30 compliant if following the diet)
- 8 eggs, beaten
- 2 cups fresh chopped veggies, such as red onions, peppers, tomatoes, green onions
- Salt and pepper, to taste
- Light a grill or stovetop over medium heat. Add sausage and cook until no longer pink. Create a “pool” in the center and add eggs. Cook, stirring, until eggs are cooked through.
- Add veggies and cook until warm. Serve immediately and add salt and pepper, as desired.
