Slow Cooker Honey Garlic Chicken Recipe

If our lives had a title right now it would be The Walls Are Closing In. School snacks, backpacks, stacks of papers and piles of laundry litter our RV. There are many signs letting us know this mobile chapter of our lives is coming to a close. I loved having it as a summer home, but a great fall home it is not. Cooking and baking fall-style in an RV is challenging! I borrowed my mother-in-law's crockpot to make this meal last week and I could hardly find a place to put it!

Food does not sit in our RV cupboards for long, so everything gets used pretty quickly. One of the things we strangely have an abundance of right now is honey, so it became one of my main ingredients for this yummy and super EASY dinner.


I found a crockpot-sized spot on our table to let dinner simmer while I ran errands. I came back to the most delicious smell our RV has ever known. YUM. YUM.

The easiest dinner you will ever make and there's no forfeiting taste!

prep time: cook time: 8 hourtotal time: 8 hours


  • Six boneless chicken breasts, cut in half
  • 16-oz. bag baby carrots
  • 10 baby red potatoes, halved
  • 14-oz. can chicken broth
  • 1/2 cup ketchup
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 3/4 cup water
  • 4 cloves garlic, minced
  • 1/4 cup flat-leaf parsley, chopped
  • Salt and pepper, to taste


  1. Place chicken, carrots and potatoes in a large crockpot. In a medium bowl, combine chicken broth, ketchup, honey, soy sauce, water, garlic, parsley, salt and pepper. Mix well.
  2. Pour mixture over contents in crockpot. Cook over High heat for 4-5 hours or Low heat for 7-8 hours. Serve warm!


4-5 hrs on High heat or 7-8 hours on Low heat.
