My first food blogging conference is under my belt. I have met so many incredibly talented and inspiring women over the past few days! And for once I didn't feel like a freak photographing the plate of food sitting in front of me. :) We food bloggers wear many hats, we must become experts on many topics and it is always evolving. It is my dream job, and I absolutely loved connecting with people who enjoy it as much as I do.

This yummy little spaghetti squash treat was dinner the night before my trip to Austin. I LOVED IT. I've always loved me some squash, but never as much as this one. It even beat out this yummy stuffed squash recipe.

Aside from its total yumminess, the thing I love most about this recipe is how easy it was to make!

Imagine the possibilities when stuffing your own squash! Typical spaghetti toppings are amazing, but really anything could work. Start with some delicious Instant Pot Spaghetti Sauce if you don’t have a jar of sauce available or you’d like to make your own. Then from there, you can add sausage, mushrooms, varying types of cheese and herbs, the options are endless..

SPAGHETTI SQUASH BEEF AND CHEESE BOATS

A healthy way to enjoy spaghetti!

prep time: 11 minscook time: 14 minstotal time: 25 mins

ingredients:

  • 1 lb ground beef
  • 28-oz. jar spaghetti sauce
  • Two large Spaghetti Squash
  • 1/2 stick of butter, cut into 8 slices
  • 2 cups shredded Mozzarella cheese
  • 1/4 cup chopped flat-leaf parsley

instructions

  1. In a skillet over medium heat, cook beef until no longer pink. Drain and add spaghetti sauce and cook until heated through.
  2. Puncture squash all over with a fork. One at a time, place squash in microwave and heat on high heat for 10 minutes or until squash is soft to the touch. Cut in half lengthwise and scoop out (and discard) seeds with a spoon. Comb through flesh with a fork and place two pats of butter on each half.
  3. Divide the sauce between the squash halves. Top each with 1/2 cup cheese and microwave for 1 minute (optional). Top with fresh parsley and serve immediately!
