Make-Your-Own Chicken Burrito Bowls Recipe

No need to run out to your local Mexican restaurant - this is a healthy but super delicious recipe you can make yourself easily!

Let's hear it for Saturday night! This week was nuts. Good nuts and crazy nuts. The food detailed in this post has nothing to do with nuts.

This week we bid farewell to Elijah's second grade year, we celebrated Sammy's fifth (holy cow, fifth) birthday, Dan left for a DC trip, much work was accomplished away and at home, we visited friends, aunties and cousins and even squeezed in a soccer game or two. The commotion caused two members of our family (one of them ME) heightened anxiety, insomnia and resulting sass. A new week begins tomorrow!

Dan and I are Chipotle lovers, so I was freakishly excited to make these burrito bowls on Monday night. They are better than the "real" deal and I will be making them again. Tomorrow.

Chicken Burrito Bowl Recipe

Combine 2 cups of cooked rice, 1 tablespoon of butter, 1/4 cup chopped cilantro and lime juice. Mix well and divide between two large serving bowls.

Top with: shredded chicken, corn, salsa (I used both red and green) and lettuce. Top with sour cream and shredded cheese. Guac, too, if it's handy.

Mix it all up and DEVOUR! You'll never go to Chipotle again! Ok, maybe you will, and I don't blame you. That place serves dang delicious food.

  • 2 cups cooked white rice
  • 1/4 cup fresh cilantro, chopped
  • Juice from 1 lime
  • 1 tablespoon butter melted
  • 2 cups shredded chicken
  • 1 cup cooked corn kernels
  • 1/2 cup salsa verde
  • 1/2 cup red salsa
  • 2 cups chopped lettuce
  • A few dollups sour cream
  • 1/2 cup shredded cheddar cheese
  1. In a medium bowl, combine rice, cilantro, lime juice and butter. Mix well and divide between two large serving bowls.
  2. Divide the chicken, corn, salsas and lettuce between the two bowls and top with sour cream and cream cheese. Mix well and enjoy!
