Double Chocolate Puff Corn
/An addicting gluten-free snack great for holiday or winter gatherings!

As you may have been able to gauge from my recent posts, I have been consuming WAY too many calories. My clothes are SNUG. I saw a photo of myself from a few days ago and gasped. Why is it that we see things in photos that we cannot see in mirrors? Anyhow, this madness has to stop. But before I do anything extreme, I have a few more indulgent recipes to snarf down...er, post about...like this and these and these. I made this delish little snack last week for a girls' night with my sisters-in-law and mother-in-law. It did not last long. And it's gluten-free!

Pour a 9-oz. bag of puff corn into a large bowl.
In a small bowl, melt an 11-oz. bag of white chocolate chips (buy the good stuff, preferably) in the microwave in 30-second intervals, stirring after each until smooth.
Pour the melted white chocolate over the puff corn.

Gently stir until coated. Add sprinkles, just for fun!

Arrange the puff corn in a single layer on two parchment-lined baking sheets.
In a small bowl, melt 1 cup of milk chocolate chips in 30-second intervals, stirring after each until smooth. Drizzle over the puff corn and let sit for 30 minutes, or until the chocolate has hardened.

Store in a sealed container if it makes it that long.

Ingredients:
- 9-oz. bag puff corn
- 11-oz. bag white chocolate chips
- Sprinkles (optional)
- 1 cup milk chocolate chips
- Line two baking sheets with parchment paper and set aside. Add the puff corn to a large bowl. Place the white chocolate chips in a small bowl and heat in the microwave in 30-second intervals (stirring after each) until smooth. Pour the melted white chocolate over the puff corn and carefully stir until coated. Add sprinkles, if desired.
- Arrange the puff corn in a single layer on the prepared baking sheets. Place the milk chocolate chips in a small bowl and heat in the microwave in 30-second intervals (stirring after each) until smooth. Drizzle the melted milk chocolate over the puff corn. Let sit for 30 minutes, or until the chocolate has hardened. Store in a sealed container.
