Rice and Veggie Salad with Knorr® Sides

This salad is absolutely perfect for small or large gatherings! Great as lunch or a side to dinner, as well. It is colorful and packed with delicious flavor and textures! Made better with Knorr® Sides Herb and Butter variety.

I have a little secret. When you have a very limited amount of time to empty out your house of thirteen years, have a giant salad hanging out in your fridge at all times. I made this DELICIOUS salad last week with the help of Knorr® Sides and it was so helpful to be able to sneak into the refrigerator quickly for meals and random snacks throughout the day. It saved me tons of time in between packing boxes, cleaning and doing laundry like a crazy woman. This salad turned out way better than I ever could have expected. It is super satisfying and yummy. I will make it again and again!

Without the rice this would still be a yummy salad, but the addition of the Herb and Butter variety totally makes it. You have to check out the selection of rice varieties that Knorr has to offer. They know food and they've got you covered no matter what flavor you are aiming for.

Aside from a couple "standard" ingredients that you likely have in your cupboards and fridge, this salad requires only seven ingredients. It screams both summer gathering and also easy lunch and side.

Rice and Veggie Salad with Knorr® Sides

Serves: Ten 1-cup servings

Total time: 30 min



  • 5.4-oz. pkg. Knorr® Sides Herb and Butter
  • 1 orange bell pepper, seeds removed and chopped
  • 1 cucumber, peeled and sliced
  • 10.5-oz. container cherry or grape tomatoes, halved
  • 1 red onion, chopped
  • 10-oz. pkg. frozen shelled edamame, prepared according to package directions
  • Juice from 2 limes
  • 3 tablespoons olive oil
  • 3 tablespoons white wine vinegar
  • Salt and pepper, to taste
  1. Prepare rice according to package directions. Transfer to a large bowl and let cool.
  2. Add bell peppers, cucumbers, tomatoes, onion, edamame, lime juice, olive oil, salt and pepper. Mix well and refrigerate until ready to serve!
