Candied nuts

This week I went from vacation, beach and relaxation to home, hospital and emotions. And now it is Friday, which I am hoping will bring more relaxation. Minus the beach, darnit!
I made a batch of these candied pecans to put into a salad, but I ended up eating most of them sans lettuce. These are goooood!
Place a piece of parchment paper on a baking sheet and set aside.
Melt 3 tablespoons of butter in a medium skillet over medium-high heat.

Add:
1/2 cup sugar

Add:
2 cups pecans or walnuts

Cook, stirring constantly, until the sugar dissolves and becomes a light brown liquid in the skillet. This will take a few minutes.
Remove the skillet from the heat and add 1 teaspoon of vanilla extract. It will sizzle like crazy, so stir quickly until it is all mixed together.

Pour the nuts onto the parchment-lined baking sheet and let cool completely.
Eat as a snack, or add to a lettuce or chicken salad!
