Peach Blueberry Crisp

Did you know that peaches and blueberries are one of the tastiest fruit combos ever? It's true! This Peach Blueberry Crisp is an incredible way to enjoy this delicious duo!

We are still living in our RV and are currently parked in my in-laws driveway. We plan to give them a break from our antics soon, but we've enjoyed being here. They have kindly let us use their washer-dryer and their house is a fun distraction for the boys once in a while. Last week my mother-in-law found herself with an over-abundance of peaches and berries, so she offered them up. I saw those perfectly ripened peaches and the huge container of blueberries and knew just what I wanted to do. I transformed my no-fail Apple Crisp recipe into this delicious Peach Blueberry Crisp, which also contains blackberries because who could resist?

This is such a fool-proof recipe that's totally easy to throw together. And I think it goes without saying that vanilla ice cream must be involved.

Peach and Blueberry Crisp

Peaches and blueberries are such a great pair. This crisp is DELICIOUS! Add blackberries if you have them on hand.

  • 4 peaches, peeled, pitted and sliced
  • 1 pint blueberries
  • 1/2 pint blackberries (optional)
  • 1 cup oats
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup butter, melted
  1. Preheat oven to 350 degrees F. Place sliced peaches in a single layer in a 9x13 pan. Top with and blueberries (and blackberries, if using).
  2. In a medium bowl, combine the oats, flour, sugars, baking powder and melted butter together. Crumble evenly over the peach-blueberry mixture and top with additional peaches, if desired. Bake in preheated oven for 45 minutes. Serve warm with vanilla ice cream!
