Fiesta Lime Chicken

This delicious family meal requires only seven ingredients and it is done in less than 30 minutes! It is colorful and also flavorful!

We are in the throes of total madness in our house that will very soon no longer be our house. So many huge life changes have come our way, some self-inflicted and some not. For the past month or so, we have been skimping on lots of things including eating. You know, that thing that's kind of important to do once in a while. Sometimes we forget to eat dinner, which is crazy because I love dinner. On the nights that we remember to nourish our bodies, we prepare something super quick and easy like this totally delicious Fiesta Lime Chicken. We absolutely loved the simplicity of this recipe and the flavor was unbelievable! This is a family-friendly recipe that we will make again and again, even in the crazy times.

Any variety of rice would work great with this meal, but using a Spanish, Fiesta or Mexican variety sends it over the top. After I sprinkled the little bit of cheese onto the chicken, some of it fell down and melted into the rice. Mmmm!

Isn't there something so yummy about freshly grilled chicken? We grill so much chicken in the summer months and love adding it to tasty dinners like this one.

Fiesta Lime Chicken

Only seven ingredients and this delicious family dinner is done in under 30 minutes!

Fiesta

Ingredients:

  • 4 chicken breasts, fat trimmed
  • 2 cups prepared rice, preferably Mexican or Spanish varieties
  • 1 tomato, chopped
  • 1 green bell pepper, seeded and chopped
  • 1/4 red onion, chopped
  • Juice from 2 limes
  • 1 cup shredded pepperjack cheese
Instructions:
  1. Light a grill over medium heat. Cook the chicken for 7 minutes on each side, or until cooked through. Prepare rice according to package directions.
  2. In a medium bowl, combine tomatoes, bell peppers, red onion and lime juice. Mix well and set aside.
  3. Layer as follows on each plate when ready to serve: 2 large spoonfuls rice, 1 cooked chicken breast, 1/4 cup pepperjack cheese and 2 spoonfuls veggie mixture. Serve immediately!
