Strawberry Cake Mix Brownies

Even though I am officially DONE with February, I'm not yet ready to part with winter. I'm watching snow fall lightly outside right now. The tiny flakes are in no apparent hurry to reach the ground. Just patiently falling lightly and quietly from the grey sky. There is a peace and beauty about winter that cannot be found in any other season. I'll be sad to see it go this year.

A few weeks ago I remade my favorite brownie recipe of all time and it inspired me to create another variety, these Strawberry Cake Mix Brownies. These are just as tasty as I dreamed they would be.

Like my faves, these require only a handful of ingredients and they are absolutely indescribably easy and yummy. I am a huge fan of allowing cake mixes do my legwork.

My boys spotted this very batch of Strawberry Brownies (call them Strawberry Bars if you'd like) on the counter when they got home from school and could not keep their hungry little fingers off them.

Strawberry Cake Mix Brownies

EASY strawberry bars with a touch of jam and white chocolate!

Strawberry

Ingredients:

  • 15.25-oz. package strawberry cake mix
  • 3/4 cup butter, melted
  • 1/3 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 3/4 cup strawberry jam
Instructions:
  1. Preheat oven to 350 degrees F. Grease a 9x13 baking dish and set aside. In a large bowl, combine cake mix, butter, evaporated milk and vanilla. Mix well and spread two-thirds of the batter into prepared pan, pressing with fingertips. Bake in preheated oven for 8 minutes.
  2. Sprinkle white chocolate chips evenly over the partially cooked brownies. Drop the jam in dollups over the top. Drop the remaining batter over the top in clumps (it will not be completely covered). Bake for an additional 20 minutes. Let cool before cutting into squares.
