All of you gluten-free guys and gals with a sweet tooth are going to love me. I was chatting with my stepmom the other day on the phone and she mentioned making a batch of gluten-free, THREE-INGREDIENT peanut butter cookies. Wait, what?! Only three ingredients? I hung up the phone and immediately began making them out of sheer curiosity. They worked! They were really good! Give them a try!
This is all you will need. Peanut butter, sugar and an egg! Crazy, right? If you want to get super crazy, add some vanilla and salt.
Stir with a spoon until creamy and refrigerate the dough for 30 minutes so it firms up a bit.
Form 1-inch balls with your hands and place onto parchment-lined baking sheets. Press the bottom of a fork into each dough ball in a criss-cross pattern (spray fork with cooking spray, if needed).
Bake for 10 minutes at 350 degrees and that is IT!
The little fingers in my house could not stay off these things.
