Yellow Poppyseed Cake

For the first time in years, I have more food photos to share than I have time to post. I've been cooking and baking like a fool and I love it! A very busy season is approaching, so it has been fun to squeeze in the things I want to do more than anything else. Cooking, baking, photographing and blogging. There is a cute story behind this delicious cake. My oldest cutie gave me this recipe on Mother's Day this year and it was titled Mommyseed Cake. Awww. I've been telling him for months that we would make it together and it finally happened a few days before second grade began. The little boys LOVED it...we all loved it. It's as easy as pie, er...cake.

In a large bowl, combine the water, applesauce, yellow cake mix, poppyseeds, instant pudding and egg whites.

Mix it all up, using either a hand-held mixer or your strong arm. Pour the mixture into a bundt pan or a square baking dish.

Bake for 50 minutes and top with a simple glaze, if desired. I used my standard 1 cup powdered sugar + 4 tablespoons milk.

Have a GREAT rest of your week! More yumminess to come soon!
