Crockpot Mac and Cheese

(12/29/14--Some people who tried my original Crockpot Mac & Cheese recipe were not satisfied with it. I want EVERYONE to love it, so I redid it and then redid it again! Enjoy! AS REQUESTED, I am posting the original recipe at the bottom of this post.)

Sigh. We are home from our last big trip of the summer. I love adventure and traveling so much. When our boys are older, I want the four of us to explore the world together. I keep telling Elijah and Sammy that our first stop on the other side of the ocean will be either Italy or Ireland. In the meantime, I am content being at home for a stretch. There is something so comforting and peaceful about being in your own home and sleeping in your own bed, isn't there? Adventure is great, but there is no place like home.

We won't be gearing up for school for a few weeks, but I know some people are already back in the swing! If you are, you'll likely be looking for some easy weeknight meals. You absolutely must add this crockpot mac and cheese recipe to your list. It is absurdly easy and an all-around family pleaser. We all LOVED it and it was just as delicious as leftovers!

Seriously, does it get any easier than this? Throw only FIVE ingredients into your crockpot and set it on Low heat. 

Give it a stir and sprinkle a bit of grated Parmesan over the top.

Two to three hours later, dinner is served! Give it a stir a couple times throughout, if you can, and start checking for doneness at the 2-hour mark. Depending on the crockpot, this can finish anywhere between 2 and 3 hours, give or take. In my crockpot, it was PERFECT after 2.5 hours!

Crockpot Mac and Cheese

This is one of my boys' favorite versions of mac and cheese. Five ingredients, one crockpot and dinner is done!

Serves: 10

Total time: 2-3 hrs

TITLE"

Ingredients:

  • 16 oz. elbow macaroni
  • 3 cups milk
  • 8 oz. velveeta, cut into chunks
  • 1/4 cup (1/2 stick) butter, cut into chunks
  • 3 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
Instructions:
  1. Cook pasta in boiling water 3 minutes short of being al dente.
  2. Place the cooked macaroni, milk, velveeta, butter and cheddar cheese into a crockpot. Stir and top with Parmesan cheese. Set heat to Low and cook for 2 to 3 hours. Stir occasionally and check for doneness starting at the 2-hour mark.

Here was my original recipe. Throw the following ingredients into your crockpot on Low. Start checking for doneness at 1.5 hours. (side note: boil the macaroni for a few minutes first for optimal results)
