We are on the tail end of our 2014 summer road trip. In all honesty, it has not been an easy adventure. Elijah is struggling more than ever. The (un)perfect storm has been brewing in his little mind/body, making him act in ways I have never seen. If I had known this scenario would have transpired, I never would have left Minnesota. But here we are, on the back side of our journey, good and bad memories under our belts. We have a day and a half left in North Carolina, a day of driving, a night in Kentucky, another looong day of driving and then we will be home! It has been wonderful to spend time with friends and family, but we are excited to sleep in our own beds and most of all we are excited to see Dan. We have missed him a lot.
Random thought about traveling with small children: There should be drive-thru Starbucks/Caribou stops every few miles and just off the interstate. Where is all the coffee when I need it most?!
While we have been at my parents' house, easy food has been imperative. We threw a few ingredients into a few half-pint mason jars the other night before we slipped into our beds and in the morning, breakfast was ready in a matter of minutes. This is something I will do A LOT once we get back home.
Half-pint mason jars are the perfect size for these beauties, so clean a few out and fill each with:
1/4 cup oats (rolled or steel cut)
2 teaspoons chia seeds
1/2 cup milk
Chopped fruit of your liking (choose from: bananas, strawberries, blueberries, blackberries, raspberries, mangos, cherries)
Add "extras," if desired (choose from: dried cherries, raisins, honey, cinnamon, vanilla or almond extract)
Screw the lids on tight and place in the refrigerator overnight. In the morning, empty the contents into a bowl and microwave for 1 minute (optional).
With very minimal effort, a healthy, delicious breakfast is served!
