Today was awesome! Sammy and I were supposed to go to Elijah's 1st grade Track and Field Day, but it got rained out. That was a bummer, but the result was a day spent with my sweet almost-four-year-old Sammy. He loves his mama so much and I love him back even more. We did tons of playing, reading and tickling. I even took a nap with my arms wrapped around his cuteness. That is something I usually don't get the chance to do and I loved it. I have been working so much lately, so it felt GREAT to have this time with my youngest cutie. If the weather cooperates tomorrow, Sammy and I will have a picnic at Elijah's school while we watch him do the "hippity-hop relay race." Another cutie-filled day for lucky me!
The weather has been FANTASTIC lately. It is hard to go inside at the end of the day. I like to sit in the warm sun, staring at the green leaves on the trees and watching the boys play outside. When Dan has been home we've been doing a lot of grilling on our tiny charcoal grill. Did I mention that our other grill caught on fire and almost burned our house down? Yep, it's true.
Ok, so this spicy cilantro lime butter is AMAZING, and it tastes incredible when slathered on grilled corn. You HAVE to add this to your summer grilling list!
Remove the husks from 4 ears of corn. Place them directly on a grill (medium heat) and cook for 10-15 minutes, rotating often.
Meanwhile, combine the following ingredients in a medium bowl.
Mix well and spread over the corn when they are hot off the grill. Squirt lime juice over the tops and serve! This is my new favorite way to enjoy corn. DEE. LISH.

- 4 ears of corn, husks removed
- 1/4 cup mayonnaise
- 2 tablespoons butter, softened
- 1/4 cup Parmesan cheese
- 2 tablespoons cilantro, finely chopped
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- Lime wedges
- Light a grill over medium heat. Place corn cobs on the grill and cook for 10-15 minutes, rotating often.
- In a medium bowl, combine mayo, butter, Parmesan cheese, cilantro, cayenne pepper, salt and pepper. Mix well.
- Spread the butter over the corn cobs, squirt them with fresh lime juice and serve!
