Double Chocolate Puff Corn

As you may have been able to gauge from my recent posts, I have been consuming WAY too many calories. My clothes are SNUG. I saw a photo of myself from a few days ago and gasped. Why is it that we see things in photos that we cannot see in mirrors? Anyhow, this madness has to stop. But before I do anything extreme, I have a few more indulgent recipes to snarf down...er, post about. I made this delish little snack last week for a girls' night with my sisters-in-law and mother-in-law. It did not last long. And it's gluten-free!

Pour a 9-oz. bag of puff corn into a large bowl.

In a small bowl, melt an 11-oz. bag of white chocolate chips (buy the good stuff, preferably) in the microwave in 30-second intervals, stirring after each until smooth.

Pour the melted white chocolate over the puff corn.

Gently stir until coated. Add sprinkles, just for fun!

Arrange the puff corn in a single layer on two parchment-lined baking sheets.

In a small bowl, melt 1 cup of milk chocolate chips in 30-second intervals, stirring after each until smooth. Drizzle over the puff corn and let sit for 30 minutes, or until the chocolate has hardened.

Store in a sealed container if it makes it that long.

Ingredients:

  • 9-oz. bag puff corn

  • Sprinkles (optional)
  • 1 cup milk chocolate chips
Instructions:
  1. Line two baking sheets with parchment paper and set aside. Add the puff corn to a large bowl. Place the white chocolate chips in a small bowl and heat in the microwave in 30-second intervals (stirring after each) until smooth. Pour the melted white chocolate over the puff corn and carefully stir until coated. Add sprinkles, if desired.
  2. Arrange the puff corn in a single layer on the prepared baking sheets. Place the milk chocolate chips in a small bowl and heat in the microwave in 30-second intervals (stirring after each) until smooth. Drizzle the melted milk chocolate over the puff corn. Let sit for 30 minutes, or until the chocolate has hardened. Store in a sealed container.
