Layered rainbow cake - my Chef Dennis guest post!

I was honored to be asked to write a guest post by the talented and generous Chef Dennis! He was one of the first bloggers to reach out to me when I entered into the world of food blogging. I have found him to be incredibly resourceful and kind, not to mention the fact that his blog is filled with delicious food. Thank you so much, Chef Dennis, for this wonderful opportunity!
I decided to make a cake for my guest post because today is also my one-year anniversary for starting this blog! How fitting, right? I figured I would go all out and create the most eye-appealing cake I could think of. And what could possibly be better than a bold, edible rainbow?

Some of my childhood dislikes have gone away (squash - I love it) but some are still holding strong. I am SO with you on pickled beets! (pickled anything really - but pickled beets have a special place on my dislike radar)

Love this cake and love your blog... never even knew this whole blogging world existed!!! ( I know, I know... but with 4 kids, a job as a realtor, and 3 homes to maintain I find myself a bit busy! Yours was the first one I ever considered reading. I found it while on vacation in Montana on my ipad, then somehow navigated away from it... took me 5 days to find it again!
I feel like I personally know the 2 of you after reading your sweet stories. Thank you for all of the great recipes!!! ... going to go open my new Nikon 5100 now since my old one (just 2 years old) went haywire! Thank God for Costcos awesome return policy!) ;) Your beautiful photography is inspiring... though I will never ever know how to use my camera that well! A girl can dream, right?
PS... I love cake too... and as for pickeled beets... I'm a California girl. Dont think they have those here. ;)

I've seen various versions of this cake, hands down yours is the best one yet.
