Reese's cheesecake brownies
08.14.2011
A few weeks ago we celebrated a friend's life, which sadly ended far too soon. Our celebration of his time on earth was bittersweet. It was great fun, but we missed our friend. The celebration involved food and martinis. Food because, well, everyone needs food, and martinis because our friend loved martinis. I decided to contribute a "dish" to the potluck that was totally indulgent. I didn't feel like being healthy that day and based on all of the martinis consumed, nobody else did either. These delicious treats were supremely indulgent and I only needed a teeny tiny square to be satisfied. If you have a reason to be indulgent, you must give these a try. We don't always need a reason, though, do we?

Preheat oven to 350 degrees F. Lightly coat a 9x13 pan with cooking spray.
Prepare a 19.5-oz. box of chocolate fudge brownie mix according to package directions. Spread the batter in the pan and set aside.
In a large bowl, beat one 8-ounce package of softened cream cheese with a hand-held mixer until fluffy.
Add:
One 14-ounce can sweetened condensed milk
1/2 cup creamy peanut butter
Beat until smooth.
Stir in a 12-ounce package of Reese's Pieces candies.

Spoon the mixture over the brownie batter and spread evenly.

Bake for 40 minutes or until the cheesecake layer is set and the edges are golden brown. Cool for 30 minutes and refrigerate for 30 minutes.
Add the following ingredients to a small microwaveable bowl:
One 12-ounce bag milk chocolate chips
3 tablespoons whipping cream
Microwave on high for 1 minute, or until the chips are melted. Stir until smooth. Spread over the cheesecake layer. Sprinkle 12 large Reese's Peanut Butter Cups (chopped) over the top. Store covered in the refrigerator.

So sorry to hear about your loss. This cheesecake would definitely be a wonderful treat.
Wowza Reeses inside and on top? Sounds amazing!! What a great contribution to the potluck to celebrate your friends life.
These look absolutely amazing! you have combined two of my favorite childhood favorites here, PB cups and reese's pieces! I bet they are addictive!
Wow these brownies look fantastic! I def need to try these. Great recipe!
Oh my gosh - I think everyone needs a little bit of indulgence once in a while - especially when that indulgence is one (or twelve lol) of these brownies!
It reads like you honored your friend wonderfully and celebrated a life, not mourned a death. I hope after my time, this is what people also chose to do and with a lot of chocolate.
Whoa, these look so sweet tooth satisfying. Can't wait to give this recipe a go.
So sorry to hear about the loss of your friend. Sounds like you're doing right by them though, food and booze is always a happier tribute :) Especially when they're 'indulgent' :) Buzzed
HMMMMMMMMM WOW. I need these in my life, stat.
This look AMAZING! I'm going to make these this weekend. Just wanted to double check first and make sure the 'cheesecake layer' is made of only PB, cream cheese and Eagle Brand.(?) I'm trying to imagine this mixture setting up and not melting into goo. lol Thanks!
Hi Shelly, Yep! That's what the cream cheese mixture is made of. It's a little goopy after mixing, but sets up nicely! Enjoy!

I'm sorry for your loss, but so glad you were able to celebrate. Making the brownies for my husband to take to work - I have to offer a word of caution. I added the cream and chocolate chips to a bowl and then microwaved them. Both time at approximately 40 seconds, the chocolate seized. I know there was no drips of water to be found (especially the second time). I used Nestle chips - I think it had to be that the cream was cold (shook it well the second time to make sure that it had not separated). For my third attempt, I just melted the chips and left out the cream. Seems to have worked fine. Thanks for sharing the recipe!!!
Thank you, Megan :)
I made them on Friday and they were soo GOOD. I messed up and used a 9.5x11.5 pan and they didn't cook all the way through, but that was completely my fault. I can't wait to make them again!! Thank you so much for the recipe, it's a keeper for sure!!
@Brenda- the chocolate seized up on me around 40 seconds as well. I got paranoid and wondered if the bowl wasn't totally dry. I just decided to try reducing the power on the mic to 50%, dumped a good bit more of cream and it only took approx 15-20 seconds to get it smooth enough to spread. I made these for my husband and myself so 'presentation' wasn't really a concern of mine. lol
These look amazing! Yum!
Sorry to hear about the passing of your friend :( These bars look amazing! I adore Reece's Pieces. Yummers.
