Strawberry chicken salad

 

I was on strict bed rest for the last four months of my pregnancy with Sammy, which ended just over a year ago. Here are some things that remind me of that particular period of time: lots of staring at the walls, watching Mystic Pizza or Can't Buy Me Love on tv when my contractions got out of control and I had to lie on my left side, the many many books I read, eating hummus, eating ridiculous amounts of Ben and Jerry's ice cream, the dinners my wonderful husband served me every night because sitting at the table was often too much activity for me to handle, and...the delicious strawberry chicken salad that I made myself for lunch almost every single day.

It was one of the only trips off the couch that I allowed myself. And it was always worth it. I fell head over heels in love with this salad. I still adore it, even though it reminds me of having my butt glued to the couch for months on end.

I have only ever made this recipe as a single serving, and here is what I do..

Put as much green leafy lettuce (use a variety of different kinds, or just romaine) as you want onto a big plate.

Top the lettuce with:

10 strawberries, hulled and halved

4 oz. grilled or baked chicken breast, cut into strips

1 tomato, cut into chunks

Toss everything together.

Sometimes I throw a handful of feta cheese over the top, if I'm feeling crazy.

My two favorite dressings to top this salad with are Newman's Own Lighten Up Balsamic Vinaigrette and Newman's Own Lighten Up Sun-Dried Tomato. Both are DELICIOUS and both are very low in calories.

And when you are finished with the salad, don't do anything silly like eat an entire pint of Ben & Jerry's ice cream. I would ever know about such gluttony.

Hmmmm. I would think the whole point (besides it being delicious) of eating such a healthy salad would be to eat the Ben & Jerry's....But that's just me...

I literally had this for lunch! But from Panera. LOL They add mandarin oranges, pineapple and blueberries to theirs as well. The feta on it sound like a great idea! Will be making at home soon too!

Ok, while the salad looks absolutely amazing, you've definitely given a healthy plug for adoption and made me very glad that that's the route we took instead of me being put through Mystic Pizza over and over (I have enough vibrant green envy running through me because of Julia in Pretty Woman).

I think about steamed & seasoned veggies in the same way because I ate so many of them when I was pregnant with my daughter over 17 yrs ago. Crazy about your two-red-toned salad. It's so nice that on days when you wanted a little more sweet you would do the balsamic dressing and on the other days you could do the more savory sun-dried tomato.

I'm sorry your pregnancy wasn't stellar, but this salad definitely must have given you something to look forward to! Sounds delicious!

This looks delicious! I'm going to Panera today and was planning on getting the strawberry fields chicken salad so I could figure out how to make my own. Thanks for doing all the work for me!

I just thought this was so interesting strawberries with chicken. It didn't sound "right" to me at first but I thought why not? I made this because I just had to "see" for myself and I was surprised that with everything together it actually was really good. It looks good too with the red strawberries lol

tomatoes and strawberries? That doesn't sound like they go together. Otherwise, yummy. My daughter makes it with baby spinach.
