Avocado and onion salad (and a giveaway!)

I'm a day late getting this posted. Life is kinda crazy for my family. My son's surgery is a week from tomorrow, and I'm not handling it the best. I want it to be over with, but mostly I don't want it to happen at all. So, while attempting to deal with those conflicting feelings, I'm also carrying a full-time job, being a mom and a wife, maintaining my blogs, cooking, photographing, trying to sleep.. One thing that has gotten pushed to the back burner in the past week is my perusing/commenting on others' blogs. Please be patient with me, and know that I am so grateful that your eyes glance at our little blog on occasion!
As a BIG THANK YOU for reading, and for being patient with me while I get through these next few weeks, I would love to give one lucky reader a box full of goodies from Trader Joe's! Now onto this simple yet delicious little recipe!

Arrange the following on a serving platter:
3 Hass avocados, thinly sliced
1/4 small red onion, very thinly sliced

In a small bowl, combine:
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
Salt and freshly ground pepper

Drizzle the dressing over the avocados and onions and serve immediately!

My husband and I sat in front of the tv and ate this entire plate like it was a bowl of popcorn. Except we used forks. And we had really bad breath afterward. :)

What a refreshing looking salad!
Simple and easy. Sometimes these just make the tastiest recipes!! My girlfriend had an Avacado salad made in peru very similar to this, but it has diced tomato and lime juice. I recommend it to anyone!

I totally understand when you say you want it over, but you don't want the surgery to happen at all. Ive been in that exact position too. I can remember one time reciting a line from the movie Madeleine - I can do anything over and over. I will be thinking of you and your son.
I adore Trader Joes and am so disappointed that I live thousands of miles away from one. I mean they already have the island-theme uniform, couldn't they just open one near me? Your give-away looks amazing.

I was scrolling though and looked at the picture w/o reading the entry first and I was trying to figure out what on god's green earth you were making with all that stuff from trader joe's and thinking "I just cannot imagine that would taste good..." LOL
Thinking of you as you prepare for your son's surgery. I can't imagine how hard that must be... And thank you for posting all of the Trader Joe products. Can you believe I have never been? But they are opening a store close to us and I have been trying to find recommendations of what to purchase. All of these look great!

My girlfriend ate a similar salad in Peru, but with lime and salt sprinkled on top instead of olive oil and vinegar. Sometimes something this simple can just be delicious! Thanks for sharing.

Just wanted to say that I made this salad tonight to go with our steak and veggies. Sadly (or happily, if you are my husband), it never even made it to the table because my husband ate the entire thing before I could even get it on the table!!!! Thanks for sharing.
