Cold, snowy weekends need adornment. Something to chase the blues away, to bring a smile despite the below-zero wind chills. These were exactly what the doctor ordered a couple of weeks ago when even the thought of being outside made me shiver. Chocolately and slightly gooey, with a layer of Oreos hiding out in the middle--they actually made staying inside seem attractive.
Have I ever mentioned I love Oreos almost more than my first born? I really should try to fit them into more recipes. For these brownies I used the regular variety. They were excellent, but next time I'll break out the big guns and use Double Stuff. Just to gild the lily.
Let's get this party started, shall we? First, cream together the butter and sugars, then add the eggs and vanilla. Throw in your dry ingredients along with the chocolate chips and mix until just combined. The dough should look something like this.
Next, press half of the dough in the bottom of a buttered 9x13 pan. Bake at 350 for about 10 minutes.
Then comes the fun! Top the bottom layer with two dozen Oreos. Don't they look cute all lined up that way?
Next, top the Oreos with the cream cheese mixture. I only had four ounces of cream cheese in my fridge, but I'm writing the recipe using eight ounces because more is always better. Top the Oreos and cream cheese with the other half of the brownie dough and bake for about 25 minutes.
These smelled so good while they were baking! It was all I could do not to take a spoon and go right for the middle the minute I pulled them out. But I summoned up all the restraint in my being and let them cool before cutting.
So good! I think every last crumb was gone in about 3.2 hours. Make these...you will love them!
