Grilled artichoke sun-dried tomato sandwich

This grilled cheese creation contains two of my favorite ingredients on the planet: sun-dried tomatoes and artichokes. Whenever my friend Laurie and I go out to eat together, we both order the item on the menu that has one or both of these ingredients. They are too mouth-watering to pass up. Sauteed skunk liver with sun-dried tomatoes and artichokes? Yum! I'll have that, please!
Butter one side of a piece of wheat or white bread. Place it butter-side down on a skillet over medium-low heat.
Layer with:
Provolone cheese
Spinach
Artichoke hearts (chopped)
Sun-dried tomatoes packed in olive oil (If I make this sandwich again, I will chop the sun-dried tomatoes)

Top with:
Provolone cheese
A piece of wheat or white bread, butter-side up

When the cheese closest to the pan melts, carefully flip the sandwich over. When the other cheese slice melts, remove from heat. Cut sandwich in half and enjoy! YUM!

I have a hard time looking at these photos without trying to jump into my monitor and bathe myself in artichoke, sun-dried tomato, cheesy yumminess.
