Spicy bean salsa

I could (and do) eat this salsa with a spoon. Or with chips. Or crackers. Or tacos. It is totally delicious and versatile and so so pretty.

Combine in a medium bowl:

1 15-oz. can black-eyed peas

1 15-oz. can black beans (rinsed and drained)

1 15-oz. can whole kernel corn

Get out a sharp knife and your cutting board and chop up:

2 tomatoes, chopped

1 green bell pepper, chopped

2-4 jalapeno peppers (optional; we love spice so we load up on these!), diced

1 red onion, chopped

Mix in all chopped ingredients with the black beans, black-eyed peas and corn and add to it:

8 oz. Italian-style salad dressing

A sprinkling of garlic salt

A sprinkling of salt & pepper

Mix together to create a beautiful and delicious salsa!

When I am serving this as a dip for an event or gathering, I like to prepare it the night before. Allowing the flavors to mingle with each other overnight really brings out a different level of yumminess.
