Eating my greens hasn’t seemed very appealing lately. I’ve fallen off the salad bandwagon for some reason, and the thought of veggies makes me gag. I hate it when that happens!
But I’ve got a back-up plan. Enter the Green Monster, my best breakfast buddy. Earlier this year I started experimenting with protein powder, adding in almond milk, peanut butter, chia seeds and bananas until I had a drink I loved.
Then I did something extreme. Something I’d never tried before. Something, I will admit, that had always grossed me out before: I added SPINACH to my smoothie. I know, I know. It sounds bad. My kids run screaming from the kitchen when I make it. Apparently even the sight of blended spinach is too much for them to handle. Whatever. They don’t know what they’re missing out on, which leaves more for me.
Here’s the recipe:
1 C. almond milk
1 Tbsp. peanut butter or almond butter
1 Tbsp. chia seeds
1 scoop vanilla protein powder
1 frozen banana
Fill blender with first five ingredients and combine. Add 2-3 handfuls spinach and blend again until all is smooth. Drink immediately. There are lots of good combos out there...try adding frozen blueberries or ground flaxseeds or even a teaspoon of jam for a sweeter drink.
