M&M's® Ice Cream Cookie Sandwiches

These delicious M&M's® Ice Cream Cookie Sandwiches are a delicious summer treat with an added a touch of patriotic, colorful fun!

I take for granted that Target is so close to our home. I can pop over in a matter of minutes to gather last-minute ingredients for a recipe and this happens quite often. It is so much more convenient than trudging through the grocery store aisles. I am all about convenience. Time is precious. Every minute counts for us busy moms, right? This week I ventured over to Target to pick up ingredients for these totally irresistible M&M's® Ice Cream Cookie Sandwiches as a treat for my boys. This is one of the best treats I have made for them in a long time!

Although the weather has been rather fall- or even winter-like this week, summer is here! My boys and I adore summer. My little Sammy anticipates warm weather starting in January of every year. He talks about tank tops and sunglasses and sprinklers and swim trunks when the snow is still falling. Any day that is even remotely nice (above 50 degrees), he puts on his Crocs and a tank top and wears them proudly to school. Summer is precious around these parts. We truly adore summer and everything it embodies. Swimming pools, ice-cold lemonade, picnics, sunscreen and frozen desserts are all things that make my boys happy. And if my boys are happy, I am a happy mama.

I made these delicious M&M's® Ice Cream Cookie Sandwiches as a delicious summer treat and I added a touch of patriotic fun with the Red, White & Blue variety. They turned out amazing! I will make these again and again and for a variety of summer gatherings!

I wish I could provide audio from the "Mmmms" and "Yummms" I overheard while my boys were indulging in these ice cream sandwiches. Even Dan and I kept sneaking into the freezer to enjoy just "one more bite." The cookies that form the outer parts of the sandwiches are super easy to make. These treats would be perfect for summer gatherings of any sort. I envision them in a freezer, ready for eager hands to grab at a birthday party. Or served on the Fourth of July when the sweat is pouring from foreheads and fireworks are about to explode.

If you wrap these individually in plastic wrap, they become portable, homemade OH-SO-GOOD summer treats that will make you famous. Kids will talk about you forever. In a good way.

M&M's Ice Cream Cookie Sandwiches

There's nothing that screams summer more than M&M's-packed ice cream sandwiched in between two M&M's cookies!

Serves: 11 sandwiches

Total time: 30 min, plus 4 hrs freezing

M&M's

Ingredients:

  • 3/4 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups M&M's milk chocolate candies (divided)
  • 1.75 quarts vanilla ice cream, softened
Instructions:
  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, combine the butter, brown sugar, sugar, egg and vanilla. Mix until creamy. In a medium bowl, combine the flour, baking soda, baking powder and salt. Gradually add to the sugar-butter mixture and stir until just combined. Fold in 1 cup of the M&M's candies.
  3. Roll dough into 1-inch balls and place on prepared baking sheets. Press down slightly on each ball of dough. Bake in the preheated oven for 12 minutes, or until edges are light-golden brown. Let cool completely.
  4. In a medium bowl, combine softened vanilla ice cream and 1 cup M&M's candies. Place in freezer for 15 minutes, remove and stir to create colored effect. Return to the freezer for a minimum of 2 hours.
  5. Scoop two large spoonfuls of ice cream onto the bottom of a cookie and top with another cookie. Wrap in plastic wrap. Repeat with all cookies and ice cream. Freeze for a minimum of 2 additional hours and serve!
